easy lunch recipe: halloumi, orange & beetroot salad

A colourful salad this week packed with lots of different phytochemicals 🌈

The combo of orange, honey & halloumi works a treat too 😋

As always make in advance and make a batch!



Ingredients

2 x handfuls of greens (I used kale)

1 orange, peeled and sliced

3 x beetroot (pre-cooked), cut into chunks

225g halloumi, sliced

1 avocado, sliced

3 tbsp of seeds (I used sunflower)

1 tbsp apple cider vinegar

4 tbsp olive oil

1 tbsp tahini

1 tsp honey

Recipe

If you're using kale you might want to use some of the olive oil to massage into the kale to soften it

To make the dressing mix up the ACV, honey, tahini & olive oil

Pan fry the halloumi for a fry minutes until golden

Assemble the greens, beetroot, orange, avocado, seeds on a plate, top with the halloumi & pour on the dressing

(makes enough for 3 portions)
