healthy work lunch recipe: zaatar feta frittata

Frittatas are my go-to lunch when I have leftover veggies to use up. I used yellow pepper, mushrooms and spinach in this one (but any veggies work!) and added feta and zaatar spice for extra flavour.

Cheap, nutritious & easy to make a batch.

As always make in advance and batch cook!



Ingredients

9 eggs, whisked

1 pepper, sliced

10 mushrooms, sliced

2 handfuls of spinach

1/2 onion, sliced

100g feta, crumbled

1 tbsp of zaatar spice mix

Recipe

Pre-heat the oven to 180 fan.

In an ovenproof dish saute the onion with some olive oil for a few minutes, before adding the sliced pepper & mushrooms.

Once nearly cooked add the spinach so it wilts.

Add the feta and zaatar and season well.

Pour over the egg mixture and allow to cook for a few mins before transferring to the oven for c.15mins or until the egg is cooked through.

Serve with a side salad of choice for extra goodness
