healthy lunch recipe: carrot & courgette fritters

Fritters are a great way to use up veggies and make a great batch cooked lunch.

These ones are a slightly adapted Madeline Shaw recipe.



Ingredients (enough for 2-3 portions)

2 carrots, grated

1 courgette, grated

1 egg, beaten

1 can chickpeas, rinsed & drained

1 tbsp flour (I used buckwheat)

1 tsp cajun

1 tsp paprika

Salad & hummus on the side

Recipe

Squeeze the moisture out of the grated courgette & carrots using a tea or kitchen towel.

Add the chickpeas to a bowl and mash up using a fork.

Add the flour, veggies, egg. Season & mix well.

Form into patties and cook on a medium heat for 5 mins each side.

(makes c. 6, keep well in the fridge for two days)
