Granola is great for breakfast as you can vary it each day, serving with either yoghurt or kefir (fermented yoghurt with good bacteria) or use as a topping on porridge to add extra texture.
Ingredients
400g jumbo oats
120g sunflower or pumpkin seeds (or a blend)
40g flaked almonds
60g coconut chips
Juice from 1 x orange
4 tsp of cinnamon
2 tsp of vanilla extract
50ml of maple syrup or honey
50g coconut oil
Recipe
Pre-heat the oven to 140c (fan).
Heat the coconut oil and maple syrup/honey over a low heat until melted. Remove the pan from the heat and add the orange juice, cinnamon and vanilla.
Mix the rest of the ingredients together in a mixing bowl and pour over the melted maple syrup/honey & coconut oil mixture.
Spread evenly on a lined baking tray and bake for 45-50 minutes (until golden). Stir the mixture every 5-10 minutes.
Remove from the oven and leave to cool.
Serve with yoghurt, kefir or sprinkle on top of overnight oats.
