easy lunch recipe: halloumi & roasted veggie salad

A super simple, batched cooked lunch this week.
I often make a batch of roasted veggies at the start of the week, super handy as you can just add different protein toppings and in 5 mins you have a lovely nutritious salad!
As always make in advance and make a batch!

Ingredients
250g halloumi, sliced
Couple of handfuls of spinach
Red onion, cut into chunks
1 aubergine, cut into chunks
1 red pepper, cut into chunks
1 courgette, cut into chunks
1 tbsp zaatar
Olive oil
Recipe
Add the veggies to a roasting pan with some olive oil and zaatar. Season & mix well, roast for 30 mins (do this part ahead)
When you're ready to eat gently pan fry the halloumi so golden on each side. Takes a few minutes.
Serve with the spinach and roasted veggies, drizzle over some olive oil
(makes 3 portions)
