speedy wfh lunch recipe: feta, beetroot, tahini salad

This salad can be assembled in 5 mins so no need to make it in advance, although I tend to make a batch of the tahini dressing.


As always make in advance and make a batch!


Ingredients


200g feta

Base of greens (I used rocket)

3 precooked beetroot, sliced

Red cabbage, sliced

1 avocado, sliced

Handful of cherry tomatoes

3 tbsp tahini

1/2 lemon juice

5 tbsp yoghurt

(makes enough for 3 x portions)


Recipe


To make the dressing mix up the tahini, lemon & yoghurt. Season well.


Assemble the salad ingredients, crumble the feta on top and drizzle over the dressing.
