easy wfh lunch recipe: cauliflower frittata

You can't beat a yummy frittata for lunch! A great protein rich lunch, thanks to the eggs, that will keep you nice & full through the afternoon.


Experimented with adding cauliflower in this one and it was delicious 😋

Ingredients


8 eggs

1 cauliflower, cut into v.small florets

1 pepper, sliced

1 onion, sliced

1 tsp ground cumin

1 tsp smoked paprika

2 tbsp pumpkin seeds

Olive oil

Side salad


Recipe


Pre-heat over to 200/180 fan.


Heat up the olive oil in an oven proof pan, gently fry the onion.


Add the spices, pepper and cauliflower, add a splash of water if needed.


Whisk up the eggs, season and add to the pan. Cook for 1-2mins.


Sprinkle on the seeds and add to the oven for c.15mins or until cooked.


(serves 3, keeps in fridge for a few days)
