Gut nourishing pudding - stewed apples with cinnamon

Did you know that more fibre is released when you cook apples? Specifically, a prebiotic fibre called pectin.


Pectin is beneficial for our gut microbiome and can help to modulate gut bacteria, reduce inflammation and support gut healing.


Check out my stewed apples with cinnamon recipe below. It is great to add to live yoghurt or kefir for a super charged healthy pudding or to have with oats for breakfast.

Gut nourishing pudding - stewed apples with cinnamon

 

Ingredients

3 apples (leave the skin on!)

1 tbsp of lemon juice

1 tsp cinnamon


Recipe


Cut up the apples into small cubes (c. 1cm in size) & remove the core. Add the apples to a saucepan with a few tablespoons of water.


Add the lemon and cinnamon to the saucepan and simmer for 10 -15mins (or until the apples are soft), stirring regularly.


Add a few tablespoons of the stewed apples to some live yoghurt or kefir and sprinkle on some more cinnamon to make a great healthy pudding.


Keeps well in the fridge for 3-4 days.
