one tray lunch recipe: spicy baked aubergine & black beans

This is a Doctors Kitchen recipe that is super easy and involves only one tray, winning! I slightly adapted it to add some extra protein (aka boiled eggs) but this is optional depending on how hungry you are.


I really admire Rupy at the Doctors Kitchen, he does such a good job at advocating realistic healthy eating. I always recommend his cookbooks to clients, they are jam packed with plants & flavour.


As always make in advance and make a batch!

 

one tray lunch recipe: spicy baked aubergine & black beans

 

Ingredients


1 aubergine, cut into 1cm cubes

1 courgette, cut into 1cm cubes

2 red onions, quartered

400g black beans, rinsed & drained

2 tbsp of tomato puree

2 tbsp balsamic vinegar

1 tsp honey

1 tsp ground cumin

1 tsp ground paprika

2 tbsp of olive oil

Boiled eggs (optional)


Recipe


Mix up the vinegar, honey, olive oil and tomato puree.


Add the veggies to a roasting pan and pour over the mixture, blend well with veggies. Season & add to a pre-heated oven for 20mins.


After 20 mins, add the black beans and cook for another 10 mins.


If you're having boiled eggs, cook these after you put the black beans in the oven.
