work lunch recipe: harissa quinoa with roasted cauliflower & sundried tomatoes

Harissa is a firm staple in my kitchen.

It's a middle eastern spice mix that adds SO much flavour to a dish.

It's great to add to pasta, fish, chicken. This time I've added it to quinoa!


As always make in advance and make a batch!

Ingredients


1 tbsp harissa (I love @belazu_co)

1 cup quinoa, rinsed

1 cauliflower, cut into small florets

2 handfuls of spinach

1 red pepper, sliced

10 sun-dried tomatoes, cut into small pieces

3 tbsp olive oil


Recipe


Add the cauliflower to an oven dish, drizzle with some olive oil, season & roast in a pre-heated oven (200 fan) for 30-40 mins


Cook the quinoa according to instructions (c.15 mins). Once cooked, cool down with cold water.


Add the cooled quinoa to a bowl & stir through the harissa with the remaining olive oil


Add the cooked cauliflower, spinach, red pepper and tomatoes. Give it a good stir.
