Edamame beans are great to add to lunches to get both some protein & fibre into your lunch. Peas are also great too. I always have both in my freezer!
As always make in advance and batch cook!
Ingredients
1 courgette, sliced into chunks
Bunch of asparagus, sliced into chunks
2 handfuls of edamame beans
250g pasta of choice (I used brown rice pasta)
1 lemon, zest and juice
Bunch of basil
100g walnuts
Handful of spinach
2 tbsp extra virgin olive oil
Recipe
Cook the pasta per the instructions. Once cooked rinse with some cold water to cool it down.
Gently sautee the courgette & asparagus in a frying pan with some olive oil.
Defrost the edamame beans by putting some boiling water over them for a few mins.
To make the pesto add the basil, lemon zest, juice, walnuts, spinach, EVOO to a blender, season and mix well. If needed loosen with some water.
In a bowl combine the pasta, pesto & veggies.
