I'm loving pre-cooked grains at the moment. Yes in an ideal world I would be cooking them from scratch buuuuut you know sometimes life gets in the way and they are a great addition to bulk up lunches (aka plants & fibre!) when you need to make a speedy one. Just watch out for those sneaky added ingredients. I've been using the @merchantgourmet ones.
As always make in advance and batch cook!
250g quinoa (I used ready cooked quinoa)
200g frozen peas
100g almonds, chopped
3 courgettes, chopped into chunks
Large handful of parsley, finely chopped
Large handful of mint, finely chopped
Extra virgin olive oil
1 lemon, juiced
1 garlic, finely chopped
Saute the courgette with the garlic for 5 mins.
Add the peas to the pan and cook for another few mins until cooked.
Put the cooked courgettes and peas into a bowl with the pre-cooked quinoa, almonds, fresh herbs, lemon juice and c. 4-5 tbsp of olive oil. Mix well.
